Here’s Dan Barber, a famous Jewish New York City chef, telling his funny, subtle, self-deprecating tale of the farmer in Spain whose life, he claims, is to “give the geese what they want.” The result: the best foie gras in the world without “gavage” (force feeding). How does the farmer do it? Not by trying, and failing, to control nature. Instead, he “listens to nature’s operating instructions.”
